El objetivo de la investigación fue evaluar el efecto del jugo del tallo de Oxalis tuberosa Mol. &#8220;oca&#8221; y el jugo del fruto de Gaultheria glomerata (Cav.) Sleumer &#8220;laqa-laqa&#8221; en la capacidad antioxidante de la bebida funcional. Los tallos de &#8220;oca&#8221; y el fruto de &#8220;laqa-laqa&#8221; se recolectaron para obtener el jugo. Se formularon tres tratamientos (B1, B2 y B3) con dos repeticiones cada uno, con diferentes concentraciones de jugo de &#8220;oca&#8221; y &#8220;laqa-laqa&#8221;, a los cuales se realizó una evaluación sensorial con 30 panelistas semi entrenados, en la evaluación se determinó que el tratamiento B2 (300 ml de jugo de tallo de &#8220;oca&#8221;, 800 ml de jugo de &#8220;laqa-laqa&#8221;, 1000 ml de agua tratada y 220 g de azúcar refinada) obtuvo mayor puntación para todos sus atributos (color, olor, sabor y apariencia general), el cual fue sometido a una evaluación fisicoquímica. Los resultados obtenidos fueron 89,50 de humedad,1,38 de proteína, 1,08 de grasa, 1,82 de ceniza y 6,22 de carbohidratos, mientras que Energía total: 40,13 kcal/100 g, Polifenoles totales: 1825,13 mg de ácido gálico/100 g y Actividad Antioxidante: 89,56% &#956;mol de trolox/100 g. estos resultados demuestran que es una bebida alto en energía con buena actividad antioxidante, lo cual es recomendable su consumo por las personas que se encuentran en constante actividad física.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT Functional foods are found in different consistencies or formulations, basically they can be found in liquid and powder form. The objective of the research was to evaluate the effect of the stem juice of Oxalis tuberosa Mol. "oca" and the juice of the fruit of Gaultheria glomerata (Cav.) Sleumer "laqa-laqa" in the antioxidant capacity of the functional drink. The stems of "oca" and the fruit of "laqa-laqa" were collected to obtain the juice. Three treatments (B1, B2 and B3) were formulated with two repetitions each, with different concentrations of "oca" and "laqa-laqa" juice, to which a sensory evaluation was carried out with 30 semi-trained panelists, in the evaluation It was determined that treatment B2 (300 ml of "oca" stem juice, 800 ml of "laqa-laqa" juice, 1000 ml of treated water and 220 g of refined sugar) obtained a higher score for all its attributes (color , smell, taste and general appearance), which was subjected to a physicochemical evaluation. The results obtained were 89.50 for moisture, 1.38 for protein, 1.08 for fat, 1.82 for ash and 6.22 for carbohydrates, while Total Energy: 40.13 kcal/100 g, Total Polyphenols: 1825.13 mg of gallic acid/100 g and Antioxidant Activity: 89.56% &#956;mol of trolox/100 g. These results show that it is a high-energy drink with good antioxidant activity, which is recommended for consumption by people who are in constant physical activity.]]></p></abstract>

O objetivo da pesquisa foi avaliar o efeito do suco de caule Oxalis tuberosa Mol. "oca" e Gaultheria glomerata (Cav.) Sleumer "laqa-laqa" sobre a capacidade antioxidante da bebida funcional. Os caules de "oca" e os frutos de "laqa-laqa" foram colhidos para obter o suco. Três tratamentos (B1, B2 e B3) foram formulados com duas réplicas cada um, com diferentes concentrações de suco "oca" e "laqa-laqa", aos quais foi feita uma avaliação sensorial com 30 panelistas semi-treinados, na avaliação foi determinado que o tratamento B2 (300 ml de suco de caule "oca", 800 ml de suco de "laqa-laqa", 1000 ml de água tratada e 220 g de açúcar refinado) obtiveram pontuações mais altas para todos os atributos (cor, cheiro, sabor e aparência geral), o que foi submetido a uma avaliação físico-química. Os resultados obtidos foram 89,50 umidades, 1,38 proteína, 1,08 gordura, 1,82 cinzas e 6,22 carboidratos, enquanto a energia total: 40,13 kcal/100 g, polifenóis totais: 1825,13 mg de ácido gálico/100 g e atividade antioxidante: 89,56% &#956;mol de trolox/100 g. Estes resultados mostram que se trata de uma bebida de alta energia com boa atividade antioxidante, que é recomendada para o consumo por pessoas que estão em atividade física constante.]]></p></abstract>
