<self-uri xlink:href="http://www.scielo.org.bo/scielo.php?script=sci_arttext&amp;pid=S0250-54602024000100024&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.bo/scielo.php?script=sci_abstract&amp;pid=S0250-54602024000100024&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.bo/scielo.php?script=sci_pdf&amp;pid=S0250-54602024000100024&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract The quantification of saponin content in seven Quinoa genotypes from the Southern Altiplano of Bolivia was carried out: white royal quinoa (QRB), yellow royal quinoa (QRA), Pandela royal quinoa (QRP), Toledo royal quinoa (QRT), Luki royal quinoa (QRL), black royal quinoa (QRN) and Pasankalla red royal quinoa (QRRP), through the implementation of Gas Chromatography coupled to mass spectrometry methodology (GC/MS). Oleanolic acid, Serjanic acid, Hederagenin and Phytolacagenic acid were isolated from Quinoa scarifying residues, and used as internal standards. Sapogenin extracts were obtained from seven Royal Quinoa genotypes, which were silylated to obtain trimethylsilyl derivatives and quantified by GC/MS method. In all cases, the saponin values were high, between 0.8 and 1.4%, confirming that all quinoa samples analyzed are bitter Quinoa that must be subjected to a scarifying process.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen Se realizó la cuantificación del contenido de saponinas en granos de siete genotipos de Quinua Real del Altiplano Sur de Bolivia: Quinua Real Blanca (QRB), Quinua Real Amarilla (QRA), Quinua Real Pandela (QRP), Quinua Real Toledo (QRT), Quinua Real Luki (QRL), Quinua Real Negra (QRN) y Quinua Real Rojo Pasankalla (QRRP), mediante la implementación de un método por Cromatografía de gases acoplada a espectrometría de masas (GC/MS). Ácido oleanólico, ácido serjánico, hederagenina y ácido fitolacagénico, de residuos de escarificado de quinua, fueron aislados y empleados como estándares. Se obtuvo extractos de sapogeninas de los 7 genotipos de Quinua Real, que fueron sililados a los trimetilsilil derivados y cuantificados por GC/MS. En todos los casos los valores de saponinas determinados resultaron altos, entre 0,8 y 1,4 %, confirmando que todas quinuas analizadas son quinuas amargas que deben ser sometidas a un proceso de beneficiado.]]></p></abstract>
