The management of milk production and quality in Andean environments in Peru characterized by their altitude issues that affect exposure to high anthropogenic activities and exploitation of mineral resources. The objective was to evaluate the nutritional quality of milk from cows raised in small herds in high Andean areas of free herds. The milk was characterized in terms of chemical composition and trace elements, using thin layer chromatography (TLC) and inductively coupled plasma atomic emission spectrometry (ICP-OES). The results revealed a high concentration of fat and protein at higher altitudes, with higher content of toxic trace elements and essential ones within the appropriate ranges. These results contribute to new knowledge about the quality of milk production in high Andean areas exposed to anthropogenic activities for industrial processing.
