In developing countries, including Peru, organic discharges from slaughterhouse activity generate high levels of contamination in important water sources. This situation is especially difficult in small municipalities, where technical and economic limitations do not allow the implementation of complex environmental management measures that solve the problem definitively. The implementation of sustainable environmental management strategies makes it feasible to address the problem at hand. To identify sustainable environmental management strategies, the Vester matrix was used. The results allowed identifying the generation of solid waste in the municipal slaughterhouse of Huánuco in 2023 is 2662.19 kg per day, equivalent to 972 tons per year. The density and average humidity are 1379.79 kg/m³ and 82.1% respectively; the high humidity content is due to the significant presence of organic matter.
