This study presents the description of one of the cultural and gastronomic manifestations of Carnaval through “El Ritual de Pucará” (ritual of Pucará), celebrated every year at the parish of Tarqui, Cuenca. The main goal of this investigation was to identify and describe all the cultural and gastronomic aspects that characterize the above-named ritual and know about the history of it, recreated by the community through the description of its origin, characteristics, the characters, the ancestral tools used in the kitchen, the products of the area and its gastronomic preparations. The information was collected through a field study, identifying a group of elderly people who were at that moment the protagonists of this ritual, as well as conducting an ethnographic study by visiting the area, recognizing the products and observing their culinary preparations. Finally, based on the information obtained, it is possible to rescue some cultural features and the ancestral knowledge of techniques and gastronomic preparations, preserving with these testimonials the ancestral wisdom of its gastronomic contributions through the techniques and the products from an indigenous village that is loosing its identify from one generation to another.
