Abstract

The objective of this study was to propose alternatives to give added value to waste generated by the university canteen. Under the descriptive method with a correlational approach, 100 diners were sampled and questionnaires were used with dimensions on the proposal of canteen waste and utilization at the Universidad Nacional José Faustino Sánchez Carrión. The results determined that the canteen generates waste with 670.89 kg/day (77.26 %), in quantification of waste, December stands out with 16054.34 kg/month (80.23 %), proposes the use of organic waste with 52 % for animals, proposes the use of inorganic waste with 42 %, proposed cost of food for 100 ducks with S/. 310 Soles/month ($ 81.80 Dollars) and proposed cost of balanced food with S/. 770 Soles/month ($ 203.18 Dollars). It concludes that the organic waste from the canteen can be used as poultry feed, since it saves $121.38 dollars/month, which benefits the university community.
