Abstract The Glycemic índex (Gl) is a parameter that indicates the acute impact of carbohydrates in a food on the levéis of Glucose in blood, there-fore, the amountand type of carbohydrates are the main determinants of glycaemia. In diabet-ics, foods with low Gl have a favorable impact on glycemic control, improve insulin resistance and increase HDL-Cholesterol; in addition, in healthy people they reduce the risk of develop-ing diabetes and cardiovascular diseases. In this work, the GI ofaproduct made from amaranth (Amaranthus caudatus Linnaeus), quinoa (Chenopodium quinoa Willd) and tarwi (Lupinus mutabilis Sweet) (Nutraceutical product "AQT Metabolic Control") was determined by the postprandial glycemic response after its consumption by healthy volunteers, compared to anhydrous glucose (reference food) to corroborate its potential nutraceutical role as a co-adjuvant treatment of DM2 and/or metabolic regulator in non-diabetic obese patients with orwithoutinsulin resistance. This study revealed thatafter 15 and 30 min of the consumption of anhydrous glucose, the glycaemia in the control group reached maxi-mum peaks of 115 and 118 mg/dL respectively while, after the consumption of the nutraceuti-cal product "AQT Metabolic Control" máximum peaks at the same times were 95,4 and 106,4 mg/ dL respectively. The tolerance curve for the prod-uct "AQT Metabolic Control" was flatter com-pared to anhydrous glucose and these differenc-es were statistically significant The comparison of the areas under the curve indicates that the IG of the product "AQT Metabolic Control" is equal to 30,6 % that is considered as a low Gl, therefore, the product is a recommended dietary supple-ment in the diet of diabetic patients, due to that the increase in postprandial glycaemia is not significant compared to glucose.
