Abstract

The work is based on obtaining and quantifying reducing sugars as free glu-cose through the pretreatment of starch (amylose and amylopectin) present in Blanca Real Organic Quinoa (Chenopodium sp) grains using methods such as hydrolysis with sulfuric acid at different concentrations (0, 0.5, 1, 2 %), and en-zymatic hydrolysis with Termamyl, and AMG® enzymes, and developing plant seed embryogenesis intrinsic enzymes that hydrolyze the starch to glucose. As an analytical method of quantifying glucose released HPLCwas used. Higher glucose release performances are obtained with the acid hydrolysis method which was around 100%, followed by an enzy-matic hydrolysis to about 97 % and embryogenesis about to 0.27%
